Brinjal Biryani With Coconut Milk

Ingredients:

  • Basmati Rice --- 2 Cups
  • Brinjal --- 4 medium size
  • Coconut Milk --- 2 cups
  • Bay Leaf(Biryani Leaf) --- 4
  • Green Chili -- 4
  • Cloves --- 4
  • Whole Cardamom --- 2
  • Cinnamon sticks(Dalchina chekka) -- 2 small
  • Onion -- 1 medium
  • Biryani Masala powder --- 3 tablespoons
  • Salt --- to taste
  • Ginger Garlic paste --- 1 tablespoon
  • Ghee --- 4 tablespoons
  • Cashew nuts --- 1 tablespoon
  • Turmeric --- Pinch
  • Water --- 2 cups

Preparation:

  • Wash and Soak rice in water for 15 minutes. Cut Brinjal Onion and Green chili into lengthwise thin slices.
  • In a pressure cooker, put the ghee and add cinnamon stick, cloves and cardamom and fry little.
  • Add cashew nuts and ginger garlic paste and fry for a while.
  • Then add sliced onion and green chillies and fry till the onion turns transparent.
  • Add Turmeric and Brinjal slices, then stir well.
  • Now add Rice(drain water completely) and stir gently.
  • Then add  coconut milk (2 cups) + water (2 cups).
  • Now add Biryani powder and Salt , and stir well.
  • Pressure cook for one whistle.


                                         Serve it Hot with Tomato Gravy.............it is yummy.
