Brinjal Biryani With Coconut Milk
Ingredients:
- Basmati Rice --- 2 Cups
- Brinjal --- 4 medium size
- Coconut Milk --- 2 cups
- Bay Leaf(Biryani Leaf) --- 4
- Green Chili -- 4
- Cloves --- 4
- Whole Cardamom --- 2
- Cinnamon sticks(Dalchina chekka) -- 2 small
- Onion -- 1 medium
- Biryani Masala powder --- 3 tablespoons
- Salt --- to taste
- Ginger Garlic paste --- 1 tablespoon
- Ghee --- 4 tablespoons
- Cashew nuts --- 1 tablespoon
- Turmeric --- Pinch
- Water --- 2 cups
Preparation:
- Wash and Soak rice in water for 15 minutes. Cut Brinjal Onion and Green chili into lengthwise thin slices.
- In a pressure cooker, put the ghee and add cinnamon stick, cloves and cardamom and fry little.
- Add cashew nuts and ginger garlic paste and fry for a while.
- Then add sliced onion and green chillies and fry till the onion turns transparent.
- Add Turmeric and Brinjal slices, then stir well.
- Now add Rice(drain water completely) and stir gently.
- Then add coconut milk (2 cups) + water (2 cups).
- Now add Biryani powder and Salt , and stir well.
- Pressure cook for one whistle.
Serve it Hot with Tomato Gravy.............it is yummy.
