Simple KICHIDI from My Grand MOM's Generation


                               

   Ingredients:

     Rice --2 cups
     Toor Dal --3 table spoons
     Urad Dal -- 1 table spoon
     Onion --1 medium size
     Potato --1 medium size
     Garlic --4 cloves finely chopped
     Ginger --finely chopped 1/2 tablespoon
     Green Chili --3
     Curry leaves --6
     Salt --to taste
     Cumin seeds/Jeera --1 teaspoon
     Mustard seeds -- 1/2 teaspoon
     Turmeric --1/4 teaspoon
     Oil --1 tablespoon
     Water --4 cups

  Preparation:

    First soak rice with water for 15 minutes. Cut potato, onion and green chilies into medium size pieces.Take a thick base pan(pressure cooker also fine) and keep it on medium flame. pour oil into heated pan then add cumin seeds ,mustard seeds ,green chilies, garlic and ginger pieces. After all these are fried add curry leaves, onion ,potato, turmeric ,urad dal and toor dal while stirring well. Now add 2 cups of soaked rice and 4 cups of water then add salt as per taste, stir well  and close with lid. Let the rice should be cooked well while stirring once/twice after 5 minutes and close the lid again.(If you are cooking in pressure cooker keep it for one vessel).
After rice cooked garnish it with coriander.

Serve hot with little ghee, it's really Yummmyyyyyyyyyyyyyyy.......
