Sweet Corn Vegetable Rice

Ingredients:

Rice --2 cups
Water -- 4 cups
Sweet corn -- 1/4 cup
Carrot -- 2
Beans -- 4
Green Chili -- 4
Ginger garlic paste -- 1 teaspoon
Ghee/Oil -- 2 tablespoons
Salt -- to taste
Turmeric - pinch
Jeera -- 1 teaspoon
Curry leaves -- 4
Coriander -- 2 tablespoon
Spring onion -- 2 tablespoons chopped
Vinegar - 1 teaspoon

Preparation:

  • Wash rice, and cook rice with double quantity of water while adding
  • 2-3 drops of oil. (Cooked rice will become non sticky if you add oil)
  • Allow rice to cool down. Meanwhile Chop Carrot, beans and green chili into small pieces.
  • Take a pan and heat ghee or oil.
  • Add Jeera, when it is spluttering add chopped green chilies, curry leaves , carrot, beans and Sweet corn and stir well.
  • Now add ginger garlic paste and pinch of turmeric and mix well.
  • Now close the pan with lid for 2 minutes so that the vegetables will become tender.
  • Open the lid and add rice and salt for your taste, then mix it well.
  • Add vinegar and fry the rice till the rice is heated.
  • Now turnoff the heat and  garnish with  chopped spring onion and coriander.
  • Tasty Sweet corn rice is ready .Serve it hot.
